Low Carb Chicken Crust

(*Adapted from Hey Keto Mama)
[4 servings: 3/4 lean, 1/8 Green, 1-1/4 condiments]
Ingredients:
1 pound ground extra lean chicken or turkey (2 lean)
4 Tbls shredded reduced fat Parmesan cheese (2 condiments)
6 oz shredded reduced-fat Mozzarella (1 Lean)
1-2 whisked egg whites
1/2 cup frozen spinach (1/2 Green)
1 tsp minced garlic (1 condiment)
1/2 tsp chili powder (optional 1 condiment)
1/4 cup diced green onion (optional 1 condiment)

Directions:
~Preheat oven to 350°F
~In large bowl mix ground chicken or turkey, cheese, egg white and seasonings.
Thaw spinach and remove excess water with paper towel or cheesecloth, add to mixture
Line baking sheet with parchment paper and press chicken mixture into 4 even thin layer. 
Bake for 15 minutes 
Remove from oven and top with desired toppings, up to additional 1/4 lean (2 ounce) reduced-fat cheese
Bake for an additional 10-15 minutes until cheese is melted and brown or until cheese is melted and golden. (Oven temps vary. Watch carefully so you do not overcook.)
Separate into 4 equal serving and freeze chicken crust (no toppings) individually for quick meal.
