Jalapeno Popper Pizza and Sugar Free Raspberry Red Pepper Sauce: Meal for One

[1 serving= 1 lean, 3 servings Green, 2 Condiments, 1 Fat, 1/2 Snack*optional]

Red Pepper Cali'LITE Pizza Crust (3 Green, 1/2 Lean)
1 diced roasted Jalepeno
2 Tablespoons Light Cream Cheese (1 Fat)
1/4 cup 1% Cottage cheese (1/6 Lean)
1-1/2 ounce Eggbeaters (1 Condiment)
2 ounces Reduced-fat Cheese, shredded (1/3 Lean)

Directions:
  • Preheat oven to 375°F.
  • Bake Cali'flour Crusts on Parchment Paper lined baking stone/sheet for 10 minutes .Remove from oven; let set 5 minutes.
  • In a personal blender combine Cream Cheese, Cottage Cheese and Eggbeaters and pulse until smooth and creamy.
  • Spread creamy mixture over baked crust, then add the diced roasted jalapeños (2 Tablespoons), topped with the 2 ounces shredded Reduced-fat Fiesta blend cheese (1/2 lean).
  • Put back in oven for 8 minutes or until cheese melts and the cream mixture is set.

OPTIONAL: Drizzle with a Raspberry Crushed Red Pepper sauce or enjoy as is.

SUGAR-FREE Crushed Red Pepper Raspberry sauce/Glaze

* Can also be used as a glaze for turkey or chicken)
[1 Servings: 1/2 Snack (serving size=1/8 cup), 1/8 condiment]
1/3 Cup Boiling Water
pinch crushed red pepper flakes (1/16 Condiment)
1/4 teaspoon Sugar free Raspberry Gelatin (1/2 Snack)

~In a medium sauce pan, bring water to a boil then add in red pepper flakes and gelatin to dissolve, whisking continuously to prevent burning.
~Boil for additional 5-8 minutes. Let cool slightly to gel.
