Cali'flour Turkey Meatball Bites With Marinara (Veg option): Dinner for 3

[3 Servings (10-11 bites): Each serving is 1 Lean, 3 Green, 2 condiments]
For Meatballs:
Ingredients:
8 ounce Ground Extra Lean Turkey (1 Leanest)
4 ounce Turkey Sausage (1/2 lean)
1 tsp minced garlic (1 condiment)
1/4 cup fresh chives, chopped (1 condiment)
1/16 cup fresh parsley, chopped (1/4 condiment)
1-1/2 tsp fresh thyme (1/2 condiment)                                                                      
Pinch of salt &Pepper (1/4 condiment)
1/4 cup cauliflower, riced & *squeezed (1/2 Green)

Direction:
Preheat oven to 350*F Prep cauliflower by steaming 'til tender. Squeeze water from Cauliflower  in a cheesecloth or by hand then pulse in a food processor. Mix all ingredients together in a large mixing bowl to combine. Shape into 32 small meatballs. Place on parchment paper lined baking dish. Bake  meatballs until they are cooked through. Set aside while the crust is prepared.

For Crust Wrap:

(Or Homemade Cauliflower Crust)
4 ounces reduced-fat mozzarella
4 wedges Light Laughing Cow Cheese (2 Fat)

Raise Oven temp to 375*F.  Place Cali'flour Crust on parchment paper lined Baking Stone. Bake each crust for 8 minutes, remove each to spread cheese wedges over crust then add 2 ounce reduced-fat mozzarella cheese to each pizza. Bake each crust until cheese is melted. Remove and let rest 5 minutes. Cut each crust into 16 strips.  Wrap Crust strip around a meatball then secure with a toothpick.  Bake for 5 more minutes.

*SERVE with My Homemade Marinara sauce or an approved store bought one.

Homemade Marinara
[4 Serving: 1 Green, 1/2 Condiments]

1-1/4 cups Petite Diced Tomatoes (2-1/2 Green)
1/4 cup diced roasted green bell pepper (1/2 Green)
1 can mushrooms (4 ounce can=1 Green)
1 teaspoon minced Garlic (1 condiment)
1/2 teaspoon Italian Seasoning (1 condiment)
Pinch of salt and pepper

Puree all ingredients in a personal blender. In a small sauce pan simmer sauce on low for approximately 10-15 minutes to cook down. (This step could be skipped but your sauce may be more liquid)    
*Use also over Spiraled Zucchini or Spaghetti Squash or for a dip. Enjoy!
