Green Bean Casserole (L&G)(+F Opt)

[4 Servings: 3 Greens, 1/4 Lean, 2 Condiments, 1 Healthy Fat]
 

~Preheat oven to 350°F.
~STEAM: 4 cups steamed green beans (8 Green). Set aside in a large mixing bowl.
~Spritz a large skillet and sauté:
2 cups sliced mushrooms (4 Green)
1/4 cup diced onion (4 Condiments)
1 tsp minced garlic until tender (1 Condiment)
~Add to the green beans and let cool.
~In a small mixing bowl combine:
6 ounce Fage Total 0% (1/2 Lean)
4 ounce low-fat/light sour cream (4 healthy fat)
1/2 tsp course ground pepper (1 Condiment)
1/4 tsp salt (1 condiment)    
1 teaspoon Cornstarch (1 condiment)
~Mix until well combined then add in to green bean mixture. Toss to coat evenly.

Add 2 ounce reduced-fat cheddar, shredded (1/3 Lean)

~Spread mixture into a Casserole dish Spritzed lightly with Pam.
~Sprinkle 1 ounce Reduced-fat cheese, shredded (1/6 Lean) and 2 Tablespoon reduced-fat Parmesan cheese.
~Bake for 30-35 minutes until top is golden brown.

Buttermilk Cheddar Herb Biscuit toasted for crumbs
*If you prefer a bread crumbs topping, you can utilize a fueling OR Snack option like the biscuit (made as directed then pulsed in blender and toasted 10 minutes at 350°) puffs, poppers, pretzel bites, crisps, puffed snacks etc. (*USE ONLY FUELINGS you can have. Remember to check for allergens)

~Top veggies and cheese with crumbs before baking.

*Remember to save a portion of each serving for a fueling later or snack if option snack like puffed snacks, crisps or crackers are used for crumbs.
