Spinach "Artichoke" Chicken Quiche

[3 servings: 1 Lean, 3 Green, 2 Condiments, 1/2 fat]

1 Red Pepper Cali'flour Crust (3 Green, 1/2 Lean)
1 cup Hearts of Palm (2 Green)
1 cup frozen Spinach (2 Green)
1/2 cup sliced mushrooms (1 Green)
1/2 cup scallions, chopped (1 Green)
4 ounces shredded chicken breast (2/3 Lean)   
1 ounce diced turkey bacon, (1/5 Lean)
2 eggs + 4 egg whites (1 Lean)
1/4 cup Fage Total 0% Yogurt (2 Condiment)
4-1/2 Tablespoons Half & Half (1-1/2 Fat)
4 ounces reduced-fat Mozzarella (2/3 Lean) 
1/2 teaspoon ground pepper (1 Condiment)
1 teaspoon garlic, minced (1 Condiment)
1/4 teaspoon salt (1 Condiment)
1 tablespoon onions (1 Condiment)

Directions:
~Preheat oven to 350 degrees F.
~In a glass pie pan, set Cali'flour crust on bottom of pie pan.
~Bake for 8 minutes then remove and top with Hearts of Palm, Spinach, Mushrooms, scallions, shredded chicken and diced turkey bacon.
~In a medium mixing bowl, combine eggs/whites with yogurt and Half & Half and whisk completely then add the seasonings and shredded cheese beating until well blended.
~Pour creamy egg mixture over the veggies and meat.
~Bake quiche for 35-40 minutes or until egg is cooked through.
~Divide into 3 equal portions and Enjoy!
