Cali'Zone: Chicken Spinach Alfredo (Dinner for 2)

 One of my husband's favorite meal is a Calzone. The only thing he doesn't like is the dough. I know it's weird but this guy does not like bread or pizza crust, but he loves the flavor of the toppings. So when I started to make us the Cali'flour Crusts, my husband was eating every bit of it. Not even once has he returned his plate with half of the stuff still on the plate. This is a great find. Not that he needs to lose weight, the guy is 6'4" and only 175lbs, but he does need to eat healthier. We are not getting any younger, after all. He is getting more veggies in but full of flavor. So in honor of his favorite meal I made 2 types of  Cali'Zones.


Cali'Zone-Chicken Spinach Alfredo
[Dinner for 2: Complete Lean & Green meal, 2 Condiment, 1 Fat]
1 Original Italian Cali'LITE Crust (3 Green, 1/2 Lean)
  • Bake crust at 400°F for 8 minutes
  • In a medium mixing bowl combine
6 ounces skinless boneless chicken breast (1 lean)
1 cup fresh spinach, shredded (1 Green)
2 wedges Light Laughing Cow Cheese (2 Condiments)
1/2 tsp Mrs. Dash garlic herb blend (1 Condiment)
1/2 Tbls onions, minced (1/2 Condiments)
  • Scoop filling on to half of the crust. Sprinkle 3 ounces reduced-fat shredded mozzarella over meat mixture. (Reserve pinch of cheese for crust)
  • Fold crust in half, then broil 2 minutes.
  • Carefully flip calzone over. Brush with 1/2 Tablespoon Butter (1 Healthy Fat-Light Margarine can be used if you choose) 1/2 tsp minced garlic (1/2 condiment) and sprinkle with the reserved cheese, then broil 2 minutes more.
To Serve: Cut into 4 wedges (2 wedges per serving) Serve each with 1 cup spring mix(1 Green), 1 Tablespoon Light dressing (1/2 Healthy Fat)
