Sweet Potato Zucchini Bread

[6 Servings: 1 Fuel, 1/2 Green, 1-1/2 Condiment, *1/6-1/3 Fat] *Eat only one serving of this per day

Ingredients:
3 packets Honey Sweet Potato
3 packets Cinnamon Cream Cheese Swirl Cake
1 teaspoon Baking powder (2 Condiment)
1 tsp pumpkin pie spice (2 condiments)
6 whisked egg whites (one additional egg white per day will not affect a fat-burn)
4 Tablespoon SF Pumpkin Spice Syrup or Brown Sugar Cinnamon or Gingerbread (2 Condiments)
1-1/2 cups shredded Zucchini, squeeze out all extra water (3 Green)
1-1/2 teaspoon yeast (3 condiments)


Directions:
*Activate yeast in 1/2 cup really warm water for few minutes.
~Whisk Egg whites in a medium mixing bowl to break them up then add Fueling packets, spice, SF Syrup, Vinegar and yeast mixture.
~Mix in Zucchini until combined then pour into a loaf pan spritzed with Pam.
~Let set in warm area to rise double it's size. (Note: If it isn't in a warm area it will not rise! To help it rise best, turn oven to 200*F with a cake pan of water on bottom shelf for approximately 30 minutes. Turn oven off. Place damp cloth over dough. Set dough on top shelf above hot cake pan of water and close oven door quickly to hold in heat) **After dough has risen, if quick rise method used, remove pan of water and cloth before baking.
~Bake at 350*F for 40 minutes or until golden brown on top
~Brush 1 Tablespoon light Butter OR Margarine (1-2 Fat) on top if desired. Divide into 6 equal portions.

Buttermilk Cheddar Potato Bagels (Fueling)

 [6 Servings: Each counts as 1 Fueling, <1 Condiment, 1/2 Fat]


Ingredients:
3 packets OPTAVIA™ Buttermilk Cheddar Herb Biscuit (3 Fueling)**Variations
3 packets OPTAVIA™ Mashed Potato, any (3 Fueling)
 7 Egg whites, whisked until frothy (1/2 Lean*eating 1 per day would not count towards your Lean protein)
 1-1/2 teaspoon Baking Powder (3 Condiment)
 1 Tablespoon White Vinegar (1/4 Condiment)
6 wedges Light Laughing Cow Cheese OR 6 Tbls Light Cream Cheese (3 Fat)
  1-1/2 cup Almond Milk (1-1/2 Condiment)

~Preheat oven to 350°F.
~In a medium mixing bowl, whisk egg whites until frothy then add in remaining ingredients and stir until blended.
~On parchment paper lined baking sheet, mold 6 even dollops of mixture, then push hole in center of each to make *ring (*This step is needed so the bagel is not doughy in the middle) OR make life easier by using a donut/bagel pan. I use a Pampered Chef mini donut pan. (To order, click here ! )
~Bake for approximately 15 minutes. Remove and let cool completely.
~Divide into 6 equal portions. (Portions vary depending on size of bagels you choose to make.)
~Slice in half lengthwise. Freeze in Ziplock Freezer bag what you want to save for another day or place in fridge for up to 3 days.
~When needed, toast 2 halves. If desired, top with 1 Tablespoon light cream cheese OR 1 wedge Light Laughing Cow Cheese (1/2 fat option).
 **Variations: You can utilize a variety and combination of Fuelings using this basic recipe. Try hot cereals, Cinnamon Cream Cheese Swirl Cake, Honey Sweet Potato, Mashed Potato, Biscuits, soup mixes, Mac-N-Cheese, etc. To find your favorite flavor**

*To use Soups and Pastas for bagels, pulse them in a personal blender prior to mixing with the remaining ingredients.  Here are my mini bagels using 2 packets Buttermilk Cheddar Biscuits, 2 packets Tomato Basil Bisque and 2 packets Sour Cream Mashed Potatoes for the recipe above. I like to add some of my lean. I love adding an egg white and pinch of cheese then deduct that from my Lean and Green meal.

Bagel: 3 Cinnamon Swirl Cake + 3 Honey Sweet Potato

Cheddar Herb Bread

     I am a baker at heart!  I began my culinary adventures as a little girl, age 5, when I started helping my mom in the kitchen by baking a cake from scratch. I really enjoyed cooking my mom's family recipes. (It took a LONG time to perfect my mom's Buttermilk Biscuit recipe to get it to be just like hers. The one that we still all beg her to make along with her homemade Strawberry or Blackberry Jam-But those recipes will have to wait until maintenance one of these years)
     Anyway, I remember being so adventurous and confident in my skills, at age thirteen(13), that I begged my mom to let me make Thanksgivings Dinner for our family of seven (7). Mind you, I didn't want to just "help" but I wanted to do it ALL by myself. LOL She let me have that. So I planned and prepared and darn, if I was going to just have a turkey. I wanted to do it up in a fancy way. Duck à l' Orange . My dad agreed to take me to get us 2 duck. ("Be careful what you wish for" LOL Luckily, My mom did help me pluck feathers and clean the freshly killed game birds.)
     I set out to make a couple pies, homemade dinner rolls, Mashed potatoes, gravy, stuffing and green bean casserole and my 2 Duck à l' Orange (aka Orange Glazed Duck).  It was the most memorable, tasty Thanksgiving Meal ever! I loved the Orange glazed Duck, but the feeling of accomplishment in such a major day has warmed my heart even 32 years later. I guess that is why baking and cooking gives me so much happiness. Not just the good tasting food but to have that same sense of accomplishment when something turns out tasty.
     Now fast-forward through years of eating unhealthy foods, as well as, over-eating and giving in to unhealthy triggers and that is where I am today. Over-weight, sick and in pain daily. I was so excited to start my health Journey with Optavia, even knowing I would have some struggle with the Soy Allergy. I had some skills that I could use to my advantage. I know my way around a kitchen. I can tap into that skill and be creative with my fueling recipes. I know not everyone loves cooking. So I tried to make simple recipe instructions that even the basic skills will get these done.
    Which brings us to: BREAD! Not as intimidating as it may seem. The most difficult part is getting the bread to rise. As long as you have fresh yeast and you ACTIVATE it in warm water(NOT HOT) you should be able to produce this AWESOME Fueling make-over!

Cheddar Herb Bread
 (USE ONLY ONE OF THESE PER DAY)
[6 Servings: 1 Fueling, 1 condiment]
3 packets OPTAVIA* Buttermilk Cheddar Herb Biscuit
3 packets OPTAVIA* Mashed Potatoes (any flavor)
1 tsp baking powder (2 condiments)
1/8 cup chives (1/2 Condiment)
4 teaspoons Fage Total 0% Yogurt (1/3 Condiment)
2 teaspoons Apple Cider Vinegar (1/6 Condiment)
6 whisked egg whites (equals out to 1 egg white per day used)
1-1/2 tsp yeast (3 condiments)
1/2 cup warm water

Directions:

*Activate yeast in 1/2 cup really warm water (not HOT water) for few minutes.
~Whisk Egg whites in a medium mixing bowl then add Fueling packets, Baking Powder, chives and activated yeast
~Mix until combined then pour into a loaf pan spritzed with Pam. Cover with damp cloth and set in warm area to rise double in it's size.
~Bake at 350*F for 25-30 minutes OR until golden brown.
~Divide into six (6) equal portions. I then cut each portions into 4 thin slices of bread but you can just cut in half if desired.
