Crockpot Chicken Fiesta Casserole

[4 servings: 1  Lean, 3 servings Green, 1-1/2 Condiment,  1/2* Fat]


 Ingredients:
6 ounce shredded reduced-fat Fiesta blend cheese (1 Lean)
3 cups chopped raw Cauliflower (6 servings Green)
4 wedges of Light Laughing Cow cheese (2 fat)
1/2 cup chopped fresh Cilantro (1/2 condiment)
1-1/2 tsp Low Sodium Taco seasoning (3 Condiment)
2 cup Rotel diced tomatoes (4 servings Green)
1/4 tsp Crushed red pepper flakes (1/2 condiments)
1 cup Green Bell pepper, diced (2 serving Green)
1 Tablespoon minced garlic (3 Condiment)
24 oz. boneless skinless chicken breast, cut into 1 inch cubes (3 Lean)


Directions:
*Reserve 1/2 cup cheese for topping.
~Pulse Cauliflower in food processor.
~Combine cheese (minus 1/2 cup reserved), cream cheese and 1/4 cup Cilantro in with the cauliflower; pulse to mix well.
~Spoon cauliflower mix into bottom of a crockpot; place chicken breasts evenly over Cauliflower mixture.. 

~In a small bowl mix 1/4 cup chopped Cilantro, diced tomatoes and peppers, taco seasoning; mix completely and pour evenly over chicken.
~Cook on high for 4 hours; then sprinkle with 1/2 cup Reduced-fat cheese that was reserved. Bake additional replace lid and cook for an additional 30 minutes or until cheese is melted.
~Divide into 4 servings; top with *1-2 Tablespoon light Sour Cream, if desired (*adds 1/2-1 fat)

Buttermilk Biscuit & Potato Fueling Cloud Rolls

(I made this recipe to utilize the Buttermilk Cheddar Herb biscuit and extra mashed potato fueling packets I had on hand. I prefer less herbs so to dilute the strong flavor, this was the best hack. You can also dilute the herb strength by sifting them out. Another recipe to try is mixing the Biscuit with Potato Fueling and turn them into bagels.)

[Makes 3 servings of 4 rolls: 1 Fueling, 1/3 Lean, 2/3 Fat, 1/2 Condiment]


Ingredients:
3 eggs, at room temp (1 Lean) 

4 Tablespoons light cream cheese at room temp (2 Fat)
1/4 tsp cream of tartar (1/2 Condiment)

1 packet Stevia optional
3 packets Optavia Buttermilk Biscuit OR Mashed Potato OR Combination (3 Fueling)
9 Tablespoon water

Directions:
~Preheat oven to 350 degrees.
~Separate egg whites from egg yolks, putting whites in one bowl and yolks in another bowl.
~Add cream of tartar (or vinegar or lemon juice) to whites.
~Beat whites on high until stiff peaks form. Set aside.
~In a small bowl combine Fueling packets and water
~Add cream cheese and Stevia to yolks. Whisk yolk mixture until blended , then add fueling powder to the Cream Cheese mixture and blend until dissolved
~Gently whisk yolk mixture into whites being careful to not over mix and make the whites fall. On a cookie sheet lined with parchment paper, make 12 equal sized discs, not touching. *I used a Whoopee Pie Pan spritzed with Pam Spray for this and dropped 2 Tablespoon of batter into each well.
~Bake at 350 degrees F for 30 to 35 minutes until golden brown.

Turkey Burger Sliders on Revolutions

[3 Servings: Each burger on Revolution Rolls is 1 Lean, 2 Condiment, 1 Fat]
Ingredients:
6 Revolution Rolls (1 Lean, 1 Condiment, 1-1/2 Fat] *Recipe below
15 ounces Extra Lean Ground Turkey (1-2/3 Lean)  *See Non-Cheese option below
2 Tablespoon Sugar-free BBQ sauce (2 Condiments)
3 wedges Light Laughing Cow cheese (1-1/2 Fat)
1 teaspoon Garlic, minced (1 Condiment)
2 ounce Sargentos Reduced-fat cheese (3 slices=1/3 Lean) *Optional

For Sliders:
~In a small bowl combine ground meat, 3 Tablespoon Sugar-free BBQ Sauce and garlic. Mix to combine. (*OPTIONAL-Use 18 ounces Extra Lean ground Turkey (2 Lean) if you prefer not to have cheese on the sliders.)

~Divide the turkey meat into 3 thin burger patties. Cook on low heat until the burgers reach 160 degrees F.
~Use 2 Tablespoon SF BBQ sauce(2 Condiment) OR Mustard if desired.

Revolution Rolls
[Makes 3 Servings of 2 rolls: 1/3 Lean, 1/3 Condiment,  1/2 Fat]
Ingredients:
3 eggs, at room temp (1 Lean)

3 Tablespoons light cream cheese at room temp (1-1/2 Fat)
1/16 tsp cream of tartar (a pinch)
1 packet Stevia (1 Condiment)

Directions:
~Preheat oven to 350 degrees.
~Separate egg whites from egg yolks, putting whites in one bowl and yolks in another bowl.
~Add cream of tartar (or vinegar or lemon juice) to whites.
~Beat whites on high until stiff peaks form. Set aside.
~Add cream cheese and Stevia to yolks.

~Gently whisk yolk mixture into whites being careful to not over mix and make the whites fall. ~On a cookie sheet lined with parchment paper, make six equal sized discs, not touching.

Cinnamon Chocolate Zucchini Cake

[6Fuelings: 1 Fueling, 1/2 Green, 1/2 Condiment, 1/2 Fat]

3 packets Chocolate Antioxidant Shake
3 packets Cinnamon Cream Cheese Swirl Cake
1-1/2 cup shredded zucchini (3 Green)
6 Tablespoon light Cream cheese (3 Fat)
1 teaspoon Baking Powder (2 Condiment)
1/2 cup Coconut Milk (1 Condiment)


Pour batter into 3 mini loaf pans and bake at 350°F for approximately 15-18 minutes or until toothpick tested in center comes out clean. Divide loaf into 2 equal portions. (Each portion=1 Fueling, 1/3 green, 3/8 condiment, 1/2 fat)

Soy-Free Firecracker Shrimp Pizza

~I love, Love, LOVE the ease of using the Cali'flour crusts for my low-carb on-plan meals, especially when my family loves them too. I usually make 2 pizzas between my husband, 10 yr old daughter and I. Both are made 5&1 compliant and they would eat something in addition to their pizza. *Each Cali'flour Crust count as 3 Green, 1/2 Lean on the Optavia/Medifast 5&1 weight-loss plan. The Original Italian, Sweet Red Pepper, Spicy Jalepeno and the New Plain Crust are all approved for the 5&1 plan) *Recipe approved by Nutrition Support


~Pre-heat the oven to 375 degrees F.
2  Sweet Red Pepper Cali'LITE Crusts (6 Green, 1 Lean), on a Parchment paper lined baking sheet or a vented pan (I use a Pampered Chef Pie Crust Shield over the crust to keep the edges from burning.)
~Bake for 12-15 minutes.

~In a large saucepan combine:

2 teaspoons olive oil (2 Healthy Fat)
1 teaspoon Garlic (1 Condiment)
1/2 teaspoon grated ginger (1/4 Condiment)
1/4 teaspoon Sea Salt (1 Condiment)
1 teaspoon Coconut Aminos, *Soy free sauce (1 Condiment)
1/8 teaspoon crushed red pepper flakes (1/4 Condiment)
2 Tablespoons vinegar (1/2 Condiment)
1/4 cup Green Onion, chopped *reserve the green part for later (1 Condiment)
2 Tablespoons Walden Farms Walnut Maple Syrup (1 Condiment)
1/4 cup water
  
~Bring to a light boil then stir in 8 ounces of raw peeled and deveined shrimp.
~Cook until shrimp starts to turns pink (Don't overcook the shrimp as it will cook on the pizza too.
~Spread 1 wedge Light Laughing Cow cheese (1/2 Fat each) over each crust then sprinkle 1 ounce reduced-fat mozzarella over each crust. Arrange half of the shrimp onto each pizza.
~Next, add in the greens from the scallions equally to top the pizzas.
~Bake each crust an additional 5-8 minutes until cheese melts.

Airfryer/Oven Granola Bars

[6 Fuelings: Each counts as 1 Fueling, 1/2 Condiment, 1/2 Fat]

6 Optavia Blueberry Almond Hot Cereal (OR Indonesian Cinnamon Hot Cereal)
6 Tbls SF Walden Farms Walnut Maple Syrup (3 Condiment)...

6 Tbls water
15 Pecan halves, chopped (3 Fat)*Optional

~Mix all the ingredients together and let set for 30 minutes.
~Spread mixture onto a parchment paper lined crisper tray. Score into 6 equal portions.
~Turn on Airfryer oven and reduce temp to 220 degrees F and increase time to 20 minutes.
~Rotate the crisper tray and bake for an additional 20 minutes(at 220 degrees F).


*You can rotate the tray again and bake an addition 10 minutes if you want them even crunchier.

Fire Cracker Chicken & Cauliflower Bites

[2 Serving: 1 Lean, 3 Green, 2 Condiment, 1 Fat]

Ingredients:
18 ounces skinless boneless Chicken Breast, cubed (2 Lean)
3 cups Cauliflower Florets (6 Green)
------------
3 Tablespoons Walden Farms Walnut Maple Syrup (1-1/2 Condiments)
1 teaspoon Coconut Aminos, Soy free sauce (1 Condiment) OR Balsamic Vinegar
1/4 teaspoon crushed red pepper flakes (1/2 Condiment)
1/4 teaspoon salt (1 Condiment)
2 tsp olive oil (2 Healthy Fat)
1/2 cup water



~In a small mixing bowl, whisk together all the marinade ingredients.
~Place the Cauliflower in a large Zip-lock bag AND the Chicken pieces in another Large Zipl-lock.
~Divide the marinade in half between the chicken and cauliflower and let marinate overnight.
~TO BAKE: Place Chicken pieces & Cauliflower on a Parchment paper or foil lined baking dish and bake at 350 degrees F.
*TO GRILL: Place Chicken Piece in center of a sheet of heavy duty foil and close to make a packet. Do the same with the Cauliflower. Grill on hot flames for approximately 15 minutes flipping packet over halfway through.
*Divide into 2 equal portions and serve

BBQ Chicken Pizza

[1 serving: 1 Lean, 3 Green, 2 Condiments]

 1 Sweet Red Pepper Cali'LITE Crust (Original Italian, Plain or Spicy Jalapeno are also approved for 5&1-3 Green, 1/2 Lean)

 ~Preheat the oven to 400 degrees F. Bake the crust on a vented pan or parchment paper lined baking sheet.
~Top with 1 ounce reduced-fat cheese, shredded, then add 2-1/2 ounces skinless chicken breast, diced.
~Drizzle with 2 Tablespoons Sugar Free BBQ Sauce *My favorite is G. Hughes! (2 Condiment)
~Bake an additional 8 minutes to melt the cheese. Enjoy the WHOLE Pizza to yourself!!

Key Lime Pie

[4 servings:1 Fueling, 1/4 lean, 1/2 condiments, 1/2 fat]
 
Ingredients:
2 packets Green Renewal Shake (any shake or smoothie works great for this!)
2 packets Pineapple Mango or Yogurt Berry Blast (*If you can have SOY, use vanilla shake )
1 cup 1% cottage cheese (2/3 lean)

1 egg, beaten (1/3 lean)
1 Tablespoon SF Lime syrup (1/2 condiment)
2 teaspoon Lime Juice (1 Condiment)
4 Tablespoon light cream cheese (2 fat)
6 Tablespoons Half&Half
1/4 Unsweetened Coconut Milk (1/2 condiment)

Directions:
~Preheat oven 350*F
~Blend all 4 smoothie/shake packets and all ingredients in a food processor. Pulse until creamy.
~Pour batter into four (4) 7-oz ramekins (spritzed bottom with 1 quick spray Pam to keep cheesecake from sticking.)
~Pour water inside cake pan halfway up to set the 4 ramekins into to bake in a water bath.
~Bake approximately 25-30 minutes. (*Oven temps vary so make sure to watch them. You want a creamy Custard texture not a firm tofu texture.)
~Optional- top with 2 Tablespoons Redi-whip (1 condiment) just before serving.
~Keep in Fridge 3-4 days or Freeze extras with label of condiments used for each.

Fire-Cracker Shrimp Meal (Soy-Free)

[2 Servings: 1 Lean, 3 Green, 3 Condiment, 1 Fat]
*Adapted recipe from Red Lobster

Ingredients:
23 ounces raw, peeled shrimp (yield 14 ounces cooked = 2 Lean)
3 Tablespoons Walden Farms Walnut Maple Syrup (1-1/2 Condiments)
1 teaspoon Coconut Aminos (1 Condiment)
1/4 teaspoon crushed red pepper flakes (1/2 Condiment)
1/4 teaspoon salt (1 Condiment)
2 tsp olive oil (2 Healthy Fat)
----

1 cup Steamed Broccoli (2 Green)
1-1/2 cups cauliflower florets (3 Green)
1/2 cup scallions (1 Green)
1 teaspoon Garlic, minced (1 Condiment)
1/8 cup chopped parsley (1/2 Condiment)
1/4 teaspoon Oregano (1/2 Condiment)
1 Tablespoons melted butter (2 Fat)

Directions:
~In a food processor, combine Cauliflower florets and pulse until the size of rice.
~Scoop cauliflower into a Large Skillet or pan along with the scallions, seasonings and butter. Stir and fry until moisture is almost gone.
~In a large mixing bowl combine syrup and seasoning and whisk together.
~Add Shrimp to the sauce and toss to coat. **Marinate for 2-3 hours or overnight.
*Inspired by Red Lobsters Shrimp-fest Meal
~Slide shrimp onto metal or wooden bamboo skewer (soak skewers in water).
~Brush sauce on both sides of shrimp then place on HOT Grill, uncovered, over medium heat for 2 to 3 minutes on each side until shrimp is pink.

~Divide everything into two equal portions and enjoy!
