Spinach "Artichoke" Stuffed Portobello Mushroom

*Adapted Courtesy from Slice of Life
[2 Servings: 1 Lean, 3 Green, 3 Condiment, 1 Fat]
8-1/2 ounces Portobello Mushroom, caps only (4-1/4 ounce=2Green) 
~Remove stem and rinse Mushrooms and pat dry; set aside
~In a personal blender pulse ...
Filling ingredients:
1/4 cup Bertolli Reduced-fat Alfredo sauce ( 1 Fat per NS), 
2 wedges Light Laughing Cow Cheese (1 Fat) 
1 teaspoon Garlic, minced (1 Condiment)
1 egg (1/3 Lean)
4 ounces Reduced-fat shredded cheese (2/3 Lean)
1-1/2 cup light Cottage cheese, mostly curds (1 Lean)
~In a medium mixing bowl combine filling ingredients and...
1/2 cup Hearts of Palm, diced (1 Green)
1 cup Spinach, shredded (1 Green)
4 Tablespoon Reduced-fat Parmesan (2 Condiments)
 ~Evenly divide the mixture between each of the mushroom caps then sprinkle Parmesan Cheese over top.
~Place on Parchment paper lined baking sheet
~Bake at 350 degrees F  for approximately 20 minutes until cheese is melted and bubbly.

Cheese stuffed Grilled Turkey Burgers & Cauliflower Dill Salad

[4 Servings: 1 Lean, 3 Green, 2-1/2 Condiments, 1 Fat, 1 Snack]

For Stuffed Turkey Burger

~In a medium size mixing bowl, combine :

18 ounce leanest ground turkey, 6 ounce ground turkey sausage (3 Lean)
1/4 cup chives (1 condiments)
1 tsp garlic (1 condiments)
1 cube Beef bullion (dissolve in 2 Tablespoon hot water then let set; 1 condiment)
1 Tablespoon Steak sauce (3 condiments)
2 Tablespoon light Parmesan Peppercorn Ranch (1 Fat) *Optional
2 ounce shredded reduced-fat cheese (1/3 Lean)
~Mix thoroughly until blended well.
~Divide into 8 equal thin patties.
~Place a 1/2 ounce slice of low-fat cheese in the center of 4 of the patties (Careful not to have the cheese near the edge) and cover with one of the other patties then pinch off the edges together to seal in the cheese.
~Spray grill with Pam spray to prevent sticking
~Grill approximately 15-18 minutes or until beat thermometer measures 165 degrees F.
~Flip only once halfway through so it doesn't fall apart
~Divide: 1 cup lettuce (1 Green), 1/2 Cup sliced Tomatoes (1 Green), 4 Dill Pickle Spears (Sliced at a thin diagonal-2 Snacks) into 4 equal portions to serve with the burgers along with the Cauliflower Dill salad.

NOTE: Beef, Poultry, and Fish have a 25% shrinkage as a guideline, so a 4 ounces boneless, skinless chicken breast will yield approximately 3 ounces of cooked weight. So, if you want to end up with four, four-ounce cooked turkey burgers (16 ounces total), you will need to use 20 ounces (or 1-1/4 pounds) of raw meat.

For Cauliflower Dill Salad

*Adapted recipe from Restockit

Ingredients:
3 cups steamed cauliflower (6 Green)
1/2 scallions (green onions), chopped (1 Green)
1 cup finely diced celery (2 Green)
4 dill pickle spears, diced (2 Snack)
1 boiled egg, chopped (1/3 Lean)
4 Boiled egg whites, chopped (boil eggs then remove yolks) -1/3 Lean
---------------
3 Tablespoon light mayonnaise (2 Fat)
1/2 Tablespoon yellow mustard (1/2 Condiment)
1/4 tsp salt (1 Condiment)
3/4 teaspoon minced garlic (3/4 Condiment)
1/8 tsp black pepper (1/4 Condiment)
3/8 cup fresh dill (3/8 Condiment)

Reserve to top salad:
1/8 cup fresh dill (1/8 Condiment)
1/2 teaspoon Smoked Paprika (1 Condiment)

~Quarter and steam cauliflower for 10-15 minutes, or until the cauliflower is tender. Texture is key here; you want it to be about the same texture as cooked potatoes would be for potato salad. Not too firm, but NOT mushy. Use a fork to test it as it cooks. Remove from the heat and rinse in ice water  for several minutes until the cauliflower is all cold. I set them in a salad spinner or pat dry if needed.
~Chop the cauliflower into small bites then place in a bowl with the scallions, celery, pickles and chopped eggs. Gently toss together.
~In a small bowl combine remaining ingredients and mix completely then fold into vegetable mix gently with a spatula until well combined.
~Sprinkle with 1/8 cup fresh dill and paprika over the top. Cover and chill for at least an hour.

Egg-Free Cauliflower Pizza Crust

      I have had a few requests for an Egg Free 5&1 Cauliflower Crust. I worked on the binding to find the best one and would love for you to try it and post on social media. [2 Servings: 1 Lean, 3 Green, 2 Condiments, 1/2 Fat]

6 ounces Reduced-fat Mozzarella (1 Lean)
2 Tablespoon Flax Seed (1 Fat)*prepped
4 Tablespoon hot water
2 cups steamed Cauliflower florets (4 Green)
1 teaspoon garlic, minced (1 Condiment)*optional
1 teaspoon Italian Seasoning (2 Condiment)*optional
1/2 red pepper flakes (1 Condiment) *optional

~*In a small bowl, combine hot water and Flax seeds. Let set for 1-3 hours to allow Flax seeds to soak up water.
~In a food processor combine all the above ingredients and pulse to blend well.
~On two parchment paper lined vented pans, divide the cauliflower mixture into 2 equal portions.
Press into thin pizza discs.
~Bake at 400-425 degrees F. for approximately 20 minutes.
~Flip over then spread 2 Tablespoons Rao's Sauce on EACH pizza crust (4 Tablespoons =1 Green)~Next split the following evenly between each serving.
1 cup fresh Spinach (1 Green), 3 ounces reduced-fat Mozzarella (1/2 Lean) and 3/4 cup MSF Meal Starters Grillers Recipe Crumbles (1/2 Lean-CONTAINS SOY) Divided evenly between the two pizza [*For SOY-free & Egg-Free, just make a cheese pizza by adding 3 ounces to each pizza]
~Bake an additional 10 minutes until toasty and cheese is melted.
~ Enjoy eating one egg-free pizza.

Blue Cheese Coleslaw Plus Blue Cheese Grilled Chicken Coleslaw -2 Recipes

[2 Servings: 1/3 Lean, 3 Greens, 1-1/2 Condiments, 1 Fat, 1/2 Snack]
Vegetarian (Ovo-Lacto) option
*This salad is best if allowed to marinate for a few hours, so I suggest making it in the morning that you choose to have this as your Lean & Green.


8 ounces Fage Total yogurt (2/3 Lean)

1 Tablespoon vinegar (1/4 Condiment)
1-1/2 teaspoons mustard (1/2 Condiment) 
1/4 teaspoon sea salt (1 Condiment)
1/2 teaspoon celery seeds (1/2 Condiment)
4 Tablespoons Bolthouse Blue cheese dressing (2 Fat) 

~In a small mixing bowl, combine dressing ingredients listed above.
~In a large bowl combine:

1 cup Jicama, *shredded and blanched (2 Green)
4-1/2 ounces shredded angel hair cabbage (3 Green)
3 stalks Celery, thinly sliced and chopped (1 Snack)

1/2 cup green onions,chopped (1 Green)
3 Tablespoons Treasure Cave Reduced Fat Blue Cheese (1-1/2 to *3 Condiments) *Substitute 1 Tbls Regular blue cheese- counts as 1 Condiment -if reduced-fat is not available.
3 Tablespoons fresh Parsley (3/4 Condiment)

~*Peel Jicama (Do Not eat the peel) then shred and cook in boiling water until al dente.
~Remove from heat and strain Jicama from hot water and drop into a bowl of ice water to stop the cooking process
~Toss with yogurt mixture then pour into a large Zip-lock bag to take with you. Keep in ice cooler and use by the next day. Divide into 2 equal Lean and Green meals.
*You can use this any time for a Summer time meal, BBQ Picnic or even as a Potluck item. Just double or triple the recipe as needed.

~DIVIDE into 2 portions and Serve as a side with additional 2/3 Lean option of your choice.

Creamy Jalepeno Pizza (Vegetarian-Ovo-Lacto)

[1 serving= 1 lean, 3 servings Green, 2 Condiments, 1 Fat]



Red Pepper Cali'LITE Pizza Crust (3 Green, 1/2 Lean)
1 diced roasted Jalepeno
2 Tablespoons Light Cream Cheese (1 Fat)
1/4 cup 1% Cottage cheese (1/6 Lean)
1-1/2 ounce Eggbeaters (1 Condiment)
2 ounces Reduced-fat Cheese, shredded (1/3 Lean)

Directions:
Preheat oven to 375°F.
Bake Cali'flour Crusts on Parchment Paper lined baking stone/sheet for 10 minutes .Remove from oven; let set 5 minutes.
In a personal blender combine Cream Cheese, Cottage Cheese and Eggbeaters and pulse until smooth and creamy.
Spread creamy mixture over baked crust, then add the diced roasted jalapeños (2 Tablespoons), topped with the 2 ounces shredded Reduced-fat Fiesta blend cheese (1/2 lean).
Put back in oven for 8 minutes or until cheese melts and the cream mixture is set.

Optimal *4-2-1 Plan Snack Option

According to the Optavia Guide, the Optimal Weight 4 & 2 & 1 Plan™  is perfect for you if you prefer a flexible meal plan to help you reach a healthy weight.

The Optimal Weight 4 & 2 & 1 Plan is suitable for you if you:
• Want to incorporate all of the food groups, including   fruit, dairy, and starches
• Have type 1 diabetes and are closely monitored by your healthcare provider
• Have type 2 diabetes
• Are 65 years or older and not regularly active
• Exercise greater than 45 minutes per day
• Have less than 15 pounds to lose

FRUIT
A healthy snack serving of fruit is:
• 1 small (4 oz.) piece of fresh fruit such as pear, apple, orange, etc.
• ½ cup fresh or frozen fruit
• 1 cup fresh, cubed melon such as cantaloupe, honeydew, etc.
• ¾ cup fresh berries
• ½ cup canned fruit such as peaches, pears, or fruit cocktail (choose fruit packed in water or natural juices, NOT in syrup)
• 17 fresh grapes
• ½ large grapefruit
• ½ large or 1 extra-small banana

DAIRY
A healthy snack serving of dairy is:
• ⅔ cup (6 oz.) low-fat yogurt (fewer than 120 calories)
• 1 cup unsweetened low-fat or fat-free milk (cow, soy, almond, or cashew)
• ½ cup fat-free evaporated milk
NOTE: Always choose low-fat or fat-free dairy foods. Cheese of any kind should not be considered a dairy option and therefore cannot be counted as a healthy snack. See the Vegetarian Information Sheet for information about including cheese as a lean protein choice in your weight-loss plan.

Orange Jello Fluff (2 Plan Recipes)

[4 Servings on a 5&1 Plan: 1 Snack, 1/4 Lean]

3 ounce box (small) Sugar-Free Orange Jello-any flavor works (4 Snack)
1 cup hot water
1 cup Diet Orange Sunkist
12 ounces 1 % Cottage Cheese (1 Lean)

~Dissolve Sugar-free Orange Jello in hot water. 
~Stir in the Diet Sunkist and cottage cheese.
~Divide into 4 cups and place in fridge to set up overnight.

3 ounce box (small) Sugar-Free Lime Jello (4 Snack)
1 cup hot water
1 cup Diet Orange Sunkist
12 ounces 1 % Cottage Cheese (1 Lean)
*1 cup fresh Mandarin Oranges, chopped (2 Snack) 

~Dissolve Sugar-free Lime Jello in hot water.
~Stir in the Diet Sunkist, cottage cheese, and Mandarin Oranges.
~Divide into 6 cups and place in fridge to set up overnight.

1 cup Diet 7-up
12 ounces 1 % Cottage Cheese (1 Lean)

~Dissolve Sugar-free Lime Jello in hot water. 
~Stir in the Diet 7-up and cottage cheese.
~Divide into 4 cups and place in fridge to set up overnight.
