Cali'flour Turkey Avocado Sandwich Wrap

[1 Serving: 1 Lean, 3 Green, 2 Condiment, 1 Fat]
1 Cali'LITE approved crust

~In a large non-stick skillet, cook Cali'flour Crust for 8-10 minutes then flip and cook for 5-8 minutes. (The crust should not be crispy but hold it's shape and foldable)


Avocado spread:
~ In a small mixing bowl combine 1-1/2 oz avocado with 1 Tbls Fage Yogurt and 1 wedge Light Laughing cow cheese. Mix until creamy and blended.
~Spread avocado mix over the crust. Then layer with 2 oz extra lean Turkey Deli slices and 1 oz Sargento's Reduced-fat shredded cheese.
~I opted to use lettuce on my wrap. (Per nutrition support There are 2 carbs in 1-1/2 cups of green leaf lettuce. I used 1 large leaf, so they said there wasn't enough to affect even a condiment used)

Jenn's Optimal Beef Stew

(6 servings: 1 Lean, 3 Green, 3 Condiments, 1/4 Snack) Compliant with 5&1 plan & Soy Free

Ingredients:

42 ounces Beef Chuck Roast, trim all visible fat and cut into 1 inch pieces(Yields approximately 6 Lean 5-ounce servings)
6 Tablespoon chopped onions (6 Condiment)
1/2 teaspoon coarse ground pepper (1 Condiment)
1-1/4 teaspoons garlic, minced (1-1/4 Condiment)
1 teapoon Salt or Salt Substitute (4 Condiment)
2 Tablespoons Cider Vinegar (1/4 Condiment)
1/4 teaspoon Cayenne pepper (1/2 Condiment)
1/2 teaspoon Oregano (1 Condiment)
1/2 teaspoon Paprika (1 Condiment)
3 cups Beef Broth (<1g Carb per cup: 3 Condiments)
1-2 cups water, if needed
1 cup Kohlrabi, cubed (2 Green)
2 cups Tomatoes, diced (4 Green)
2 cups Kabocha Squash, cubed (4 Green)
2 cups Jicama, cubed (4 Green)
2 cups Green Beans (4 Green)


Directions:
~Dice Tomatoes and Celery and set aside.
~Peel and dice Kohlrabi (approx. ¾-inch cubes)-Make sure to cut away any tough parts near the root end.
~Peel and dice Jicama (approx. ¾-inch cubes)-Discard and Do Not Eat the Peels.
~Peel and dice Kabocha (approx. ¾-inch cubes)
~In a Dutch oven Combine the beef cubes and seasoning and brown over medium heat.
~Add in veggies then Broth. Add enough water for the veggies to be submersed in liquid.
*FOR THICKER STEW stir in 1/2 cup mashed cauliflower in exchange for 1/2 cup Kohlrabi


For OVEN: Bake at 350 degrees F for 45-60 minutes until veggies are tender
For STOVETOP: Cook on medium low heat for 1 hour or until veggies are tender.
For CROCKPOT: Combine all ingredients in a 6-8 quart crockpot. Cook on high for 3-4 hours or on Low for 6-8 hours

Optimal Shepherd's Pie (With or Without Fueling)

 LEAN & GREEN MEAL
[1 Serving: 1 Lean, 3 Green, 2-1/2 Condiment, 1 Fat]
Ingredients:
7 ounces extra lean ground turkey (uncooked) *OR other lean protein of your choice
1/2 Tablespoon Coconut Amino=1/2 Condiment Or Wine Vinegar
1 low sodium beef bouillon cube (1 Condiment)
1/2 cup spinach (1/2 Green)
1/4 cup green beans (1/2 Green)
1/4 cup broccoli (1/2 Green)
3/4 cup frozen cauliflower (1-1/2 Green)
2 Tablespoon Light Cream Cheese (1 Fat)
2 Tablespoon Plain Greek Yogurt (1`Condiment)
1 ounce reduced-fat cheese, shredded (1/6 Lean)
Directions:
~In a pan: Sauté ground turkey, Coconut Aminos sauce, bouillon, spinach, green beans and broccoli.
~Warm Cauliflower in microwave until thawed.
~In a blender or magic bullet: add in cauliflower (after heated up) cream cheese and Greek yogurt. Blend until the consistency of mashed potatoes. Take a pan, spread the sautéed meat and vegetables along the bottom of the pan evenly. Take the mashed cauliflower and spread it over the meat and veggies to coat the top. Sprinkle grated cheese over the top and cook in the over at 350 degrees for 10-12 minutes or until the mashed cauliflower is cooked and cheese is melted. ENJOY!!!
***To Utilize MASHED POTATO FUELING:
7 ounces extra lean ground turkey (uncooked) *OR other lean protein of your choice
1/2 Tablespoon Coconut Amino=1/2 Condiment Or Wine Vinegar
1 low sodium beef bouillon cube (1 Condiment)
1/2 cup spinach (1/2 Green)
1/2 cup green beans (1 Green)
1/2 cup broccoli (1 Green)
1/4 cup frozen cauliflower (1/2 Green)
2 Tablespoon Light Cream Cheese (1 Fat)
2 Tablespoon Plain Greek Yogurt (1`Condiment)
1 ounce reduced-fat cheese, shredded (1/6 Lean)
~Make recipe as above until you get to the cauliflower.
~Make 1 packet Mashed Potato (Any flavor) as directed. Blend in personal blender with the 1/4 cup cauliflower, cream cheese and Greek yogurt until creamy. Spread over meat/veggie mixture then bake as directed in recipe above.
*Reserve 1/4 of the completed meal to use as a Fueling later!
