Heavenly Dill Eggs OR Avocado Stuffed Eggs (Lean&Green)

Heavenly Dill Eggs

Ingredients:
6 boiled eggs (reserve only 2 yolks) (1 lean)
1 Kosher dill pickle spear, minced (1/2 snack)
2 wedges Light Laughing Cow Cheese (1 Fat)
2 teaspoons Low-fat mayo (1/3 fat)
1/4 teaspoon ranch seasoning mix (1/2 condiments)
1 teaspoon mustard, optional (1/3 condiment)
1/4 teaspoon paprika (1/2 condiment)

 
Directions:
Boil 6 eggs. Cool Completely then peel and slice in half length-wise. REMOVE 4 of the yolks, KEEP only 2 yolks to use.
Set Egg white halves on a plate.
In a Mixing bowl whip the Laughing Cow Wedges (OR 2 Tablespoon Light cream cheese), Low-fat Mayonnaise, ranch seasoning, 1 teaspoon Mustard (optional), minced dill pickle until creamy.
Using a Piping bag or a spoon, fill each well of the boiled egg halves evenly with the creamy mixture.
Sprinkle the tops with the paprika. Divide according to the amount of LEAN you would like to use following the break down chart below. Enjoy your Health!

Total breakdown for the 12 egg halves:
12 egg halves=1 (Lean), 1/2 (Snack), 1-1/3(Fat) 1-1/3 (Condiments)
6 egg halves= 1/2 (Lean), 1/4 (Snack), 2/3 (Fat), 2/3 (Condiments)
3 egg halves= 1/4 (Lean), 1/8 (Snack), 1/3 (Fat), 1/3 (Condiments)

Avocado Stuffed Eggs 
 
Ingredients:
6 boiled eggs (reserve only 2 yolks)(1 lean)
1-1/2 ounce Avocado (1 fat)
 1-1/2 Tablespoon Fage Total 0% Yogurt (3/4 Condiment)
 1/2 teaspoon ranch dressing mix (1 condiments)
1/16 Chopped Chives (1/4 condiment)
 
 
Directions:
Boil 6 eggs. Cool Completely then peel and slice in half length-wise. REMOVE 4 of the yolks, KEEP only 2 yolks to use. Set Egg white halves on a plate.
In a Mixing bowl whip the avocado, yogurt, ranch seasoning, mix until creamy.
Using a Piping bag or a spoon, fill each well of the boiled egg halves evenly with the creamy mixture.

Total breakdown for 12 Avocado egg halves
[*1 serving 12 halves=1 (Lean), 1 (Fat) 2(Condiment)]
[2 Servings of 6 halves=1/2 (Lean), 1/2 (Fat), 1 (Condiment)]
 [4 Servings of 3 halves=1/4 (Lean), 1/4 (Fat), 1/2 (Condiment)]

OR you can chop them all up and divide in the desired portion of Egg Salad.
