Taco Salad Pizza Bites (L&G)

     I have been brainstorming on creative ways to use Cali'flour Foods Crusts. When I was working on my recipe E-Books I had an idea to make one titled "Loving Life: Dinner for 2" In it I wanted to have recipes that would serve two people a healthy meal that was low carb, high protein as would fit on my Optimal 5&1 weight loss plan. So many recipes have soy so I have to research to find the right balance but I still want it to look inviting and appealing. This was perfect. It is something you can make along with a dip for a party even.


 
Taco Salad Pizza Bites
[2 Servings: 3 Green, 1 Lean, 1/2 Condiment]

1 Red Pepper Cali'LITE Crust (3green, 1/2 lean)
3 ounces reduced-fat cheese
 8 ounces extra lean ground turkey
1/2 tsp taco seasoning(1 Condiment)
1/2 cup Rotel diced tomatoes (with green chilies-1 Green)
Directions:
~Brown Turkey meat then add taco seasoning and diced tomatoes. Cook until liquid is reduced.
~Cut crust into 8 wedge slices as shown.
~Place in a "flower" shape with large edge at center on a parchment paper lined baking stone.
~Bake crust wedges for 8 minutes at 400 °F. 
~Scoop turkey mixture along ring edge of crust wedge, sprinkle with cheese.
~Next, fold point over the top and secure in place with a toothpick. 
~Bake for another 5 minutes
~Divide evenly in half. Serve with 2 cups shredded lettuce or cabbage and 2 Tablespoon salsa (condiment-optional) and 2 ~Tablespoon light Sour cream (1 Fat) OR 2 Tablespoon Bolt House Cilantro Avocado dressing(1 Fat)
