[4 Servings: 1 Lean, 3 Green, 1-1/2 Condiments, 1/2 snack(opt), 1/2 Healthy Fat]
2 teaspoons olive oil (2 Healthy Fat)
1 teaspoon low-sodium taco seasoning (2 Condiment)
1 teaspoon garlic, minced (1 Condiment)
2 Tablespoons Hot Sauce (1 Condiment)
1 cup diced bell peppers (2 Green)
1 cup diced red peppers (2 Green)
3 stalks celery, diced (Snack-optional can be omitted)
1 cup diced scallions (2 Green)
4 cups diced tomatoes with green chilies (8 Green)
2 cups beef stock (<1g carbs=2 Condiments)
*Water can be added if desired to make a soup more than a stew
Brown the turkey meat in the oil then add the diced peppers and celery plus seasonings until tender. Add the Scallions and tomatoes. Reduce heat to a simmer for 15 minutes. Stir in the 3 ounces reduced-fat Fiesta Cheese blend (1/2 Lean)
Divide into 4 equal servings. Serve with a sprinkle of cheese and 1 Tablespoon of light Sour
*TOMATO BISQUE TACO SOUP: Boil 6 ounces water and dissolve a packet of Tomato Basil Bisque. Let set while you cook the Taco Soup. Mix the prepped Bisque in with one serving of the taco soup from the recipe above. Reserve 1/4 of this combination for a later fueling and have 3/4 now as your Lean and Green.
**You can FREEZE the extra portions until needed. Just take out and thaw in the fridge overnight.
